Recipe: Pizza dough and more


I have the perfect pizza dough recipe. I got this recipe from a church function this past weekend and decided to try it. It is to die for and so easy.


Mix together:
5 1/4 c bread flour, white or wheat (do not use all-purpose flour)
1/4 c sugar
1/2 T salt
1 1/2 rounded heaping TBS of SAF instant yeast
1/2 c powdered milk (this is optional, I like to use it because it is in my food storage)


Add:
1 1/2 T liquid lecithin (you can find it at a health food store)
2 c hot tap water

Mix 1 minute. If dough is too dry, add more water. If too moist, add more flour. Mix for 5 minutes in mixer of knead for 10 minutes

Use one-half of dough. Roll out.

Add toppings and bake.

For stuffed crust pizza: cut string cheese sticks in half and spread around the edge of dough. Pull dough over cheese and seal. Add toppings and bake


Bake crust for 8-10 minutes at 350 degrees or Bake stuffed crust for 15 minutes at 400 degrees.

Makes 2 pizzas.
I cooked one pizza with alfredo sauce, spinach, and chicken. The other pizza was with barbeque sauce, mushrooms, red onions, and chicken. The kids liked the alfredo sauce pizza and the adults liked the barbeque pizza.


This dough could be used for cinnamon rolls, bread sticks, dinner rolls, cheese bread, cinnamon sweet bread. After kneading the dough, shape dough for desired bread and raise for 25 minutes. Bake for 25 minutes at 350 degrees.

Veteran's Day: A Time to Give Thanks for our Those Who Have Fought For Our Freedoms


Veteran's Day is On Wednesday, November 11th. And in honor of those who are serving and who have served, there are several places that are offering discounts and freebies to Veteran's, current service men and women and, in some instances, their families. Here is an abbreviated list of what is available in the UT/ID area:

Applebee's Restaurants: FREE meal to all retired and active duty armed service members on Wed 11/11/09 only. Must provide military ID to receive FREE meal.

Golden Corral Restaurants: Military Appreciation Monday FREE "Thank-You" Dinner on Mon 11/16/09 from 5-9 pm at Golden Corral Restaurants nation-wide. The FREE meal is applicable only to current and retired military service men and women (National Guard and Reserves are included). Family members are invited to attend as well, but will be charged the regular price for their meals.

Recipe: Pillsbury Biscuit Tuna Melts

I have a TON of Pillsbury Flaky Biscuit rolls left after the great deal Albertson's had a while ago. I've come up with a number of creative ways to get them used. However, I also have a ton of tuna after the recent match ups so I got extra creative and threw these together.

Mix:
2-5 oz cans of drained tuna
1/2 can of Campbell's cream of celery soup

Open flaky biscuits and pull apart. Then separate each biscuit into two biscuits each and lay them out on a greased baking sheet. I prefer to buy the flaky biscuits because they are thinner this way, they yield more, and they cook all the way through without burning or drying out. You should now have sixteen biscuits laid out.

Spoon mixture onto the biscuits and spread flat. I add cheese to the top, since we have a ton of that too from recent cheese sales.

Bake at 350* for approximately 18 minutes.

This recipe can be easily altered. My family loves the canned chicken breast from Costco. I mix the large 12.5 oz can with a half a can of cream of chicken. The canned roast beef can be mixed with cream of mushroom. Be creative.

Recipe: Baked Potato Soup

We had a reader request for a recipe using the evaporated milk that was on sale for such a great deal last week. Here is a quick and simple recipe to use this cooking milk:

Baked Potato Soup
Recipe from Nestle's Very Best Baking site

2-3 russett potatoes, baked or microwaved
1/4 c. butter
1/4 c. onion, chopped
1/4 c. flour
1 can chicken broth (14.5 oz)

1 can evaporated milk (12 oz)
still on sale at Smith's/Kroger stores for $0.49 (with 10-item Mega Event)
crumbled bacon, shredded cheese, sliced green onions (optional)

In a large saucepan, melt butter and sautee onions until tender. Add flour and stir until smooth. Gradually add in chicken broth and evaporated milk. Scoop potato pulp out of one potato (reserve skin) and mash. Add to the saucepan and cook over medium heat until soup comes to a boil. Dice remaining potatoes and potato skin, add to the soup. Heat through, being careful not to boil. Season with salt and pepper to taste. Serve immediately, topped with bacon, cheese and onions, if desired.

Um...this soup was delicious! 100% amazing! If you love a good baked potato and love soup, you have got to try this recipe. Serve it up with some yummy, buttery biscuits and you have yourself a completely satisfying meal!

Recipe: Chicken Tortilla Casserole

How many of you have cheese, cooking soup and cream cheese in your pantry/fridge right now? I know that I do {did}! And so when I ran across this recipe, I knew that 1) I needed to try it and 2) I had all of the ingredients at home already. I love that! So here is a very simple recipe for a very yummy casserole. Since it is only me and my husband, I separate the recipe into two dishes and froze one for later. And the halved recipe was perfect for us, with left overs for lunch tomorrow.


Chicken Tortilla Casserole
Original recipe found HERE

1 can cream of chicken soup ($1/2 coupon HERE)
1 can diced green chiles
8 oz sour cream
1/2 c. milk
1 1/2 tsp. chili powder
1/2 tsp. ground cumin
2 1/2 c. shredded cooked chicken breast
8 corn tortillas, cut into bite-sized pieces
1 c. green bell pepper, chopped
1 can Ro-tel tomatoes ($0.50/1 coupon HERE)
8 oz. cheddar cheese ($1/2 coupon HERE)

Pre-heat oven to 350 degrees. Prepare a 9x13-inch baking dish with cooking spray. In a large bowl (and I do mean LARGE) combine the soup, green chiles, sour cream, milk and seasonings. Stir until blended together. Add chicken, tortillas and bell pepper, stir to combine/coat. Stir in tomatoes and 1 cup of cheese.

Spoon mixture into the baking dish and spread out to make an even layer. Cover with foil and bake for 35 minutes. Uncover and sprinkle with remaining cheese and extra tortilla strips (if desired). Bake uncovered for an additional 5-10 minutes. Let stand for 5 minutes before serving.

Serve with sour cream, salsa or sliced olives, if desired.

Suggestions: Buy a rotisserie chicken for this (you should be able to get 2 meals out of it, depending on your family size) recipe, some recommendations indicated that using a taco seasoning mix (versus chili powder and cumin) adds another dimension to the flavor profile.

Jumpstart Escape From Adventure Island Review +Their "BIG" 53 Winner's Giveaway!!!

We received a pre-release copy of Jump Start Escape from Adventure Island. My nieces and nephews were so excited when it arrived. We quickly got it in the Wii and away they played. I enjoyed watching them play as I could see all the learing they were doing when they thought that they were just "Playing a game". Hehehe. I love that JumpStart implements adventure with learning.
The kids were able to create their characters at game start and add their own hair color, facial features, skin color, and clothing. Let me say that they made some pretty funny looking characters. But they Loved the process!

Then off they went collecting sand dollars. Once they collected enough they were able to get a helium tank. In which they are trying to get enough helium tanks to blow up their hot air balloon and escape from the island. They haven't gotten that far yet...but I am sure they will soon. This game is great at keeping there attention and teaching them at the same time. I asked them what they thought of the game and here is the responses I got:

"It is sooo fun!"
"When can we come over and play it again?"
"I loved my character, he looked cool with blue skin"
"It was fun!"

So there you have it straight from the mouths of babes!

We give it 5 Stars!!!

New Fresh Market Stores Open Today

New Fresh Market Stores Open Today


The Associated Foods take-over of 34 Alberston's and SuperValu stores in UT has taken place. As of 6 pm last night, 34 Albertson's stores in UT closed their doors for the last time. They re-opened their doors at 12 noon today, taking center stage as a new grocery store in town, called Fresh Market.

Most of the familiarity of the old Albertson's stores will remain, but there will be some major differences that they want shoppers to be aware of. The number one difference is that there will be no need for you to carry a store loyalty card in order to receive advertised sale prices. The price on the shelf is the price of the item at the register, no hassles and no gimmicks. To prove it to you, for a limited time, they will give you a 5-lb bag of Western Family sugar when you turn in your Albertson's Preferred Savings card at any Fresh Market location! There is no telling how long this offer will be in effect, so get into your local store soon!

Another difference is that the stores have cleared out the Albertson's brand of food and replaced it with the Associated Food brand, Western Family. This is the same brand that we have come to know and love at other Associated Foods stores throughout Utah (Dick's, Lin's, Macey's and Dan's).

For now, the old Albertson's locations will have signs covering up their old signage. New signs and remodeling of most stores will begin to take place after the first of the year with all changes completed by April. There are 8 Albertson's stores that were not included in the purchase by Associated Foods: 2 in West Jordan, 2 in Orem, 3 in St. George/Washington and 1 in Tooele. These stores will continue to be run by Albertson's/SuperValu and honor the weekly ads.

I am excited to see what this new store has to offer. Unfortunately I am in West Jordan where my Albertson's stores are still around, but it just might be worth a trip to Riverton for me to see what this new store is all about.
